      Elaine McCarthy 是蓝带国际学院伦敦校区高级讲师,我们与她见面谈及了伦敦校区的新课程 - 烹饪管理课程。


       1. 您能描述一下伦敦校区新开设的课程吗?
       这个课程叫烹饪管理课程。我们是专门为那些真正想深入学习厨艺技巧,同时也希望学习更多关于美食和管理知识的学生而开设。


       首先,蓝带国际学院将高级厨艺课程(除高级技术,食谱和菜单设计之外,还有食品趋势,创新理论和感官技巧),关键的实操和管理学科(理解供应链,成本控制,员工管理),商业餐厅市场营销(深入学习理论知识和强调市场营销的重要性)结合在课程里。


       课程将会分为以下三部分:
       •        1/3 厨艺课程
       •        1/3 商业管理
       •        1/3 互动学习


       2. 我已经有一个厨艺学科的文凭, 为什么我还要学习这个特别的课程?
       我们意识到部分学生在完成蓝带国际学院其中一个文凭课程后想学习更多。学生需要学习相关如何有效率的每天经营一个餐厅或理解如何管理一个食品企业(包括员工管理)的主题,所以这个课程就迎合了这种特别的需要而设。


       烹饪管理文凭课程是一个可以带您进入下一个阶段厨艺学习的课程。比如他们会被要求运营自己的虚拟餐厅。


       3. 谁能申请这个课程?
       蓝带厨艺学院文凭或厨艺大文凭或同等厨艺专业毕业的学生。我们建议之前没有在蓝带国际学院学习的学生尽快联系学校以便我们可以安排一次入学面试。


       4. 学费和课程长度?
       £5,495 英镑 (蓝带毕业生免除10%学费)


       10个学习周里有200小时课堂时间和1个考试周


       课程将由伦敦部分最好的专业人士教授混合实践和理论课程的教学。

5 Questions about our Diploma in Culinary Management


Elaine McCarthy is a Culinary Management Lecturer at Le Cordon Bleu London. We meet with her so she can talk to us about the new programme launched at the school: Diploma in Culinary Management.


1. Can you describe the new programme launched in the London School?
It is called Diploma in Culinary Management. We designed it for students who really want to deepen their culinary techniques but also learn more about gastronomy and management.


For the first time, Le Cordon Bleu will have a programme combining advanced culinary course (advanced techniques, recipes and menu planning as well as food trends, innovative concepts and sensory skills), key operational and management disciplines (understanding the supply chain, costings, staff management) andbusiness & restaurant marketing (deepen your knowledge and highlight the importance of marketing).


The course will be divided as follow:
•        1/3 for culinary courses
•        1/3 business
•        1/3 interactive learning

2. I already have a diploma in culinary arts, why would I need to study this specific diploma?
We noticed some of our students wanted to learn more after studying one of our diplomas. Requests were specifically on topics related to efficiently running a restaurant on a daily basis or understand how to manage a food business  incl. staff management. This course has therefore been developed to meet their specific needs.


The Diploma in Culinary Management is a programme that would bring you to a next level in your culinary studies.  For instance they will be asked to run their own virtual restaurant.

3. Who can enrol on this course?
Le Cordon Bleu Diploma or Grand Diplôme or equivalent culinary qualification. We recommend that students coming from outside Le Cordon Bleu to contact the school in order to schedule a meeting prior to enrolment.

4. What is the cost and how long does the programme last?
£5,495 (10% off for Le Cordon Bleu students)
200 hours over 10 teaching weeks and 1 week of assessments.
The course will be a mix of practical courses and lectures taught by some of the best professionals available in London.

5. Once I graduate, what kind of career can I expect?
We expect you to become the managers of tomorrow!


You will have the skills to become a leader in hospitality and restaurant industries at international level.


Graduates will be able to start a career in culinary management leading to a supervisory/ management roles in kitchen management in the international hospitality sector, specifically 4/5 star hotels and resorts, fine dining restaurants, conventions and event management.
