猎人谷(Hunter Valley)巧克力节
学生和厨师怀揣着对巧克力的无限钟爱,再次踏上了一年一度的猎人谷(Hunter Valley)巧克力节朝圣之旅,于7月5日和6日在风景如画的猎人谷公园(Hunter Valley Gardens)参加周末比赛活动;巧克力节每年都吸引众多优秀的饼房厨师领班、名厨和志向远大的饼房学生前来开展一切与巧克力有关的美食庆典活动。
蓝带酒店管理学院新西兰校区( Le Cordon Bleu Sydney) 的学生今年做了全面、充分的准备,胸有成竹得参加竞争激烈的嘉勒博巧克力雕塑大赛( Callebut Chocolate Showpiece Competition),成绩显赫,真是不虚此行!巧克力节开幕两天吸引成千上万的参与者,众多参赛选手将个人的技能优势发挥到极致,力争夺得最后的王冠,所以对他们来说,这是一场动态的、激动人心的大比拼。总而言之,来自澳大利亚(Australia)各地的业界厨师和学生采用比利时(Belgium)国际知名、拥有百余年辉煌历史的嘉勒博(Callebaut)巧克力,熟练运用制作巧克力模型的复杂技艺,在比赛中表现的相当出色。
比赛当天名人评审小组成员包括业界最具影响力的人物,如来自全球葡萄酒论坛(Savour)的Adriano Zumbo、Anna Polyviou和Paul Kennedy, JeremieMantelin和Pascal Janvier;蓝带国际学院(Le Cordon Bleu)很多企业家校友也出席了巧克力节,支持母校并推广他们自己的企业,如法式甜品店(Sweetness Patisserie)的拥有者Gene Kampf 和负责全国范围“美食之旅”的Tawnya Behr。
蓝带酒店管理学院(Le Cordon Bleu)学生代表包括Murial Kim、Erik Villapando、Paul Wu、Ian Septian、Amelia Ng、EimyPhan、Yeonu Park、Aggie Lee、You Ming Tseng、Gabriella Harianto、Jason Kwon、Novita Chen、Grace Kim、Stanley Ho 和Kaman Lau;在周末嘉勒博巧克力雕塑和甜点制作大赛( Callebut Chocolate Showpiece and Entremets Competition)中,厨师和校长Andre Sandison大厨严格根据比赛规则,评估所有参赛学生的表现。
巧克力雕塑和甜点大赛汇聚众多人才,竞争极为激烈,蓝带酒店管理学院(Le Cordon Bleu)学生在颁奖典礼中荣获多枚铜奖,成绩相当显著,所有团队为之骄傲和自豪;比赛仅是彼此竞争和相互学习的一种方式,奖杯所赋予的荣誉感和比赛过程带来的极大满足感让所有参赛学生感到无比的幸福!祝贺所有参赛学生,感谢蓝带酒店管理学院悉尼校区(Le Cordon Bleu Sydney)的所有教师和厨师,感谢您们一路上的支持!

Hunter Valley Chocolate Festival
Students and Chef’s once again made the annual pilgrimage to the annual Hunter Valley Chocolate Festivalon the 5th and 6th of July for a weekend of competition and pure chocolate indulgence in the beautiful surrounds of the Hunter Valley Gardens. Each year this festival draws the créme de la créme of patissiers, Celebrity Chefs and aspirational Patisserie student’s who celebrate all things chocolate.
This year a large contingency from Le Cordon Bleu Sydney made the trip to the Hunter Valley ready to compete in the fiercely competitive Callebut Chocolate Showpiece Competition. The festival attracts thousand’s of patrons over two-days and the chocolate competition is a dynamic, dramatic culmination for many as they ply their skills to prove who is the best amongst their peers. In all, industry chefs as well as students from around Australia were put through their paces mastering the intricacies of chocolate modelling using the internationally acclaimed Callebaut products from Belgium, who were celebrating over 100 years on the world stage.
Celebrity judges on the day included industry heavyweights including Adriano Zumbo, Anna Polyviou, Paul Kennedy from Savour, Jeremie Mantelin and Pascal Janvier. Many of our entrepreneurial Alumni also attended to support Le Cordon Bleu and promote this own businesses including Sweetness Patisserie’sGene Kampf and Tawnya Behr, who runs Gastronomic tours nationally.
Our Le Cordon Bleu representatives included students Murial Kim, Erik Villapando, Paul Wu, Ian Septian, Amelia Ng, Eimy Phan, Yeonu Park, Aggie Lee, You Ming Tseng, Gabriella Harianto, Jason Kwon, Novita Chen, Grace Kim, Stanley Ho and Kaman Lau. all participating on the weekend in the Callebaut Chocolate Showpiece and Entremets Competition under the watchful eye of Chef and Head Teacher Chef Andre Sandison.
On both days at the awards ceremonies the team was ecstatic to see that Le Cordon Bleu students had many bronze medals, a great achievement against such fierce and talented competitors. All students who participated can be happy in the knowledge that whilst medals were awarded sometimes it is just the act of competing and learning against your peers that can bring the greatest satisfaction. Well done to all and thank you to the teachers and Chef’s of Le Cordon Bleu Sydney who supported the team!
